What to Keep in Mind when Cooking During the Monsoons!

This is the season of awesome flavoured chai, long drives to nearby destinations, picnics, piping hot pakodas and a lot more! If you aren’t focusing on making most of the weather and having a good time, then you’re doing something wrong!
When eating out or cooking during the monsoons, in order to prevent certain illnesses, it helps to keep a few things in mind.
Avoid Reusing the same Oil
Keep in mind, monsoon = moist weather. One of the main reasons street food makes one ill is because of the water used and constant reuse of stale oil. During moist weather, germs breed faster, bacteria forms faster and foods get spoilt sooner.
It’s the season of deep fried snacks and finger foods till August / September. So gorge on what you want, just use fresh oil every time you have to fry something in your pan!
Your Kitchen Platform should Be Dry
Use water absorbent clothes and platform wipes to clean the surface of your kitchen, regularly. If you leave behind spilled over food crumbs, oil stains, etc – you are asking for trouble during the rains! Fungus will grow, bacteria will spread, not only on the platform but all over the kitchen
Check every Ingredient
You have to be twice as more alert during the rains when cooking. Check every spice packet, grain box, etc for signs of spoilage. Small insects, fungus, bacteria tend to spread faster / breed during this season. Be especially alert when washing and cutting vegetables before cooking them.
